It’s a friday night like any other friday nights. I am expecting another good break from the weekends. However, it was cold and chilly, and I was lazy, and bored, and in need of something sweet… Soooo, I took the over-ripenned bananas on top of the rack and attempted to make a banana cake. A though came to my mind: Why do I have to make a big cake instead of small ones and save for breakfast. They look prettier that the cut-up cake pieces. And so, I had some very very good banana muffins for my weekends 🙂

Preparation time: 10 minutes
Baking time: 30 minutes
Ingredients:
 – 1 cup flour
 – 2/3 tsp baking soda
 – 2/3 tsp baking powder
 – 4 over-ripenned bananas
 – 2 eggs
 – 1/2 cup brown sugar
 – 1/4 cup oil
Process:
 – Preheat oven at 375F or 190C. Cover the muffin mold with butter and dry flour
 – In a bowl, mix together flour and the powders
 – In another bowl, whisk the rest of the ingredients and mash until smooth
 – Mix in the flour until combined
 – Pour in the batter to 3/4 the mold
 – Bake for 30 minutes.
